This is via a professional chef we know -- and he sure knows what to do with a thing of duck fat.

Potatoes cooked in duck fat - good stuff. Also, D'artagnan makes a duck bacon that is absolutely delicious.

There's a gastro-pub by my house that has popcorn fried in duck fat as a bar snack/appetizer.
