I can't speak for South America but here are some thoughts about the presence of Middle-Easterners in Central America and the Caribbean:

The Palestinian/Lebanese/Persian presence is from immigrants who arrived at the beginning of the 20th century and by now the majority of their descendants are Christians. It's very hard to be a Muslim in a continent where booze, pork, and horny women are abundant both in quality and quantity.

There is an insignificant influx of Muslims migrating here (Pakistani and Lebanese) but these ones are millionaires looking for a place to invest. They're here for profit, not Prophet, and the only time they'll bother to mix with the lower class is when they're having sex with the service.

If anything. Islam here is a religion for the wealthy, and like money, it's something they are not willing to share with the poor.
