The milk study sounds like an obvious case of getting the arrow of causation backwards. People switch to low-fat milk after they or their children become fat.

The best whole milk you'll ever have is the one right after getting squeezed from the cow, you cook it at low heat. That's as good as it'll ever get, specially as it cools it forms a paper-thin buttery film -it's edible, don't be picky- at the surface.
