Bulgar wheat is not good straight but can be wonderful with other stuff. Lebanese kibbeh (lamb and bulgar meat balls) is great.

Coming from decidedly non-healthy cooking traditions (Hungarian/Kentuckian) I'd never heard of the stuff until Jimmy Buffett's lyric

I thought he was saying Vulgar Wheat for *years*.
